Jackfruit Tacos



These are completely plant-based. Mind-blown? Wait until you try them. 

On my smoothie date with Katrina this week at Kramer's on Wabash, I finally found some jackfruit! It's TexMex jackfruit by The Jackfruit Co that was in the refrigerated section. 

Clearly, it was going to be a taco night. Luckily I had some Siete Foods Almond Flour tortillas waiting in the fridge already. 

Jackfruit has the consistency of meat and will take on the flavor of any sauce. These tacos taste a lot like pork tacos, but are completely plant-based.

You will need: 

2 packets of The Jackfruit Co (TexMex) 

1 yellow pepper and/or onion

Tortillas

1 avocado

Cilantro

1 lime

Directions: open packet of Tex Mex jackfruit into your cast-iron skillet. Add in any peppers and/or onion. I just used a yellow pepper, thinly sliced. Heat until it's all warm on medium. 

Warm tortillas on your burner, flipping side to side so they don't burn. 

Peel and slice avocado thinly. 

Chop cilantro. 

Cut lime into fourths.

Plating: 

Almond flour tortilla + jackfruit & yellow peppers + thinly sliced avocado + cilantro + squeezed lime. 

These are life-changing. I'll be getting this into our family dinners a couple times a week.
