VEGAN RICE BOWL

A rice bowl is the perfect solution for leftovers!

Brussel sprouts

Roasted cinnamon carrots

1 red pepper

6 pearl onions

1 tsp Coconut oil

Jasmine rice (or whatever you are feeling that day)

3 tsp Hemp hearts

Lentils of your choice

Fresh herbs if you have any (here I have basil)

 

Roast your brussel sprouts and cinnamon carrots. (Prep in the links above)

Saute your roasted red peppers with pearl onions in coconut oil until soft

 

Cook your jasmine rice (a rice cooker is a great investment!) (1 c coconut milk, 1 c water)

Cook your lentils. (1 c coconut milk, 1 c water)

Throw everything togethere when done,  sprinkle hemp hearts on top and garnish with fresh basil. Enjoy!
