ROASTED CARROTS

Great for a party, great to meal prep, great to just have on hand.

 

You will need:

Organic carrots

cinnamon OR cayenne pepper (you want a kick or you want sweet? You choose.)

fresh rosemary

coconut oil, almond, pistachio, or almond oil

baking sheet

celtic salt to taste

ground pepper to taste

First wash and scrub the organic carrots and cut the ends off. Chop them, and place in a mixing bowl, drizzle with the oil of your choice. Use a spatula to make sure they all get a little bit of oil. If you want to just chop them and put them on the baking sheet with foil and drizzle oil on top, that also works.

Lightly sprinkle the cayenne OR cinnamon on top, depending on what you're going for. a kick or sweet? It will depend on what else you have going on in your meal. Wash the rosemary and disperse around the carrots.

 

Place in preheated oven at 400 degrees for 30 minutes, or until they are soft all the way through. Take a peek at them around 20 minutes since every oven can be different, but at 30 minutes they should be nice, soft and naturally sweet! Do a taste test at the end before serving. You may think they need a dash more celtic salt, ground pepper, cayenne or cinnamon. Place a couple rosemary springs on the serving platter for aesthetics and serve.
