ZUCCHINI

Wash and peel off strips of the organic zucchini to give the zucchini a nice presentation and slice if you want. Pair with some of your other favorite veggies or have them by themselves. Veggies that would pair well are: mushrooms, pepper, onions, jalapenos, or whatever you have!

Heat your saute pan on the burner on medium with a tbsp of coconut oil. Add some cayenne pepper if you like some spice. A little goes a long way if you cannot handle too much spice!

Cook for about 6-8 minutes until they are soft, but not limp.

In my opinion, zucchini comes out better sauteed versus roasted, but if you want to try roasting them, slice and place on a baking sheet covered in foil and roast at 400 degrees for about 18 minutes. You can also grill them for around 10 minutes or until soft. Whatever works for you so you don't get bored with this Simple Side! My latest zucchini creation was sauteed zucchini with fresh rosemary and fresh cut pineapple slices. Heavenly! Great source of vitamin C, fiber, manganese, among many other vitamins and minerals! Keep nourishing those cells!

Top with fresh basil (add extra cayenne pepper if you want) and enjoy!
