The nice thing about tacos is that you can make them last minute if you have some staples in your house. Choose what you like or what you have at home and enjoy!


First picture: organic white corn tortillas heated on burner, sprouted quinoa, roasted chickpeas, tomatoes, purple cabbage, orange pepper, radish, avocado and lots of fresh lime juice. Add a dash of Celtic salt if you desire. Cilantro would be amazing, but I made these last minute and didn't have any on hand at the time.


Second picture: 2 tbsp organic black beans, 1/4 jalapeno, 1/2 on the vine tomato, handful of cilantro, lime wedge, handful of lettuce, 1/3 avocado on a tortilla. Mmm! *heat the tortilla on burner on medium-low heat until lightly browned on both sides. Don't walk away from it! It cooks very fast.

Heat tortilla on burner on low until it's perfect.

Smear some smashed avocado on tortilla

Add the roasted chickpeas

red pepper



Squeeze lime on top

Dash of salt
