Sweet potatoes are a great source of energy, fiber and vitamins, and they are something you can "make" without paying attention to them every minute.

Preheat oven to 400 degrees.

Wash the dirt off the sweet potatoes. Wrap in foil and bake for one hour or until soft.

You know they are done when you can take a fork and ease it through the potatoes as if they are mashed.

Add cinnamon for tasting, and pumpkin seeds and hemp hearts for some extra nutrition! Pumpkin seeds are rich in zinc for immunity. Hemp hearts have omegas and protein.

Another fun way to eat a sweet potato is with organic sweet corn, cilantro, red pepper, and cashews! Use what you have on hand and are in the mood for!
