Feeds 2-3 potato lovers so adjust quantity as needed to fit your group!

You will need:


6 baby reds

2 tsp coconut oil

cast-iron skillet

sprinkle of Celtic salt

sprinkle of pepper

handful of fresh thyme and/or rosemary

Preheat your oven to 400. Heat your cast-iron skillet on medium heat with the 2 tsp of coconut oil. Wash and chop your baby reds into fourths. Sprinkle on your ground pepper and Celtic salt. Wash and chop your herbs. Add the potatoes to the cast-iron skillet and top with the herbs. Get a sear on them for about 5 minutes.

Place the cast-iron skillet in the oven for about 35 minutes, or until they are soft all the way through.  Enjoy the scent of the fresh herbs are they roast. They will come out with nice and browned and you'll be left with some happy guests!
