QUINOA BLACK BEAN SALAD
So juicy and fresh with all raw ingredients!
You will need:
Fresh organic spinach (as much as you want!)
1/3 to 1/2 an avocado
1/2 fresh organic cucumber
1 c fresh organic strawberries
1/2 c quinoa (cooked in hemp milk and/or water)
1/4 c black beans (soaked, cooked, rinsed)
Cook your quinoa in a rice cooker. (1 c hemp milk, 1 c water, 1 c quinoa) Store the rest for later in the week.
While the quinoa is cooking:
Wash and de-stem your spinach, chop, set aside.
Wash and chop strawberries, set aside.
Cut your avocado in half, scoop out with a spoon, set aside.
Cut your lime in half, set aside.
Cut your 1/2 cucumber, set aside.
Have your 1/4 c black beans ready.
Combine all ingredients, squeeze the lime on top, lightly drizzle balsamic on top and enjoy!
