Fingerlings are high in antioxidants, vitamin C, folic acid, potassium and iron. Make this real, whole food Simple Side an addition to your Quick Meals!

You will need:

12-20 Purple fingerling potatoes

3 cloves of garlic (minced)

1/2 c almond or coconut milk


Wash and scrub fingerslings, and boil until they are soft all the way through. This should take about 20 minutes. Keep an eye on them since every oven is different. Place in mixer with 3 cloves of minced garlic. Gradually pour in your 1/2 c of coconut milk. Since you may have used more or less fingerling potatoes, stir in the milk gradually until your potatoes have the desired creamy consistency. If you like them extra creamy, add more coconut milk. Enjoy!
