PORTOBELLO MUSHROOMS

Wash and scoop out the gills of the portobello mushrooms. You can add seasoning you'd like, or just ground pepper and celtic salt.

 

Get your cast-iron skillet on the burner on med-high. When it's nice and hot, put down a couple tbsp of coconut oil and throw the portobello mushrooms on. Sear on both sides and roast in the oven at 400 for 15-20 minutes.

 

While they're roasting, steam your asparagus for about 5 min. Drain and place on a plate. Add a dollop of coconut or olive oil, ground pepper, celtic salt, sprouted sunflower seeds, pine nuts, and squeeze fresh lime juice on it all. Top with kale micro greens and savor every bite!
