PB DATE BALLS
Based from this recipe from Dana @theminimalistbaker
You will need:
10 dates (pitted and soaked for 10 min)
2 tbsp fresh ground peanut butter
1/4 c carob chips (or whatever chocolate chips you want) or 2 tbsp cacao powder depending on your chocolate craving
1/2 c quick oats
1 tbsp chia seeds
Pulse the dates in the food processor by themselves. Then pulse in the quick oats, peanut butter, carob chips, and the chia seeds. It will be like a dough. Roll into balls.
If you so desire, put some cacao powder, hemp hearts or crushed unreal snacks down on some parchment paper. Roll the balls into a little for a gorgeous truffle look and a little more chocolate flavor!
These travel great if you can manage to not eat them all right away like me ;)
