SAUTEED SPINACH
Fresh garlic and lemon with sauteed spinach is full of iron and tons of vitamins and nutrients. You can get a lot of this vegetable into your body if you sautee it versus eating it raw.
Heat your pan on the burner on medium-low heat.
You will need:
Small drizzle of coconut oil or avocado oil
2 heaping handfuls of spinach
1-3 cloves of garlic depending on how much you like garlic, either minced or sliced
1/2 lemon
Salt and pepper to taste

Drizzle a little coconut or olive oil in a pan on medium heat. Lightly brown the garlic - pay careful attention to this - you really can't walk away from this step. Add in as much spinach as you care to eat. The spinach will only take 1-2 minutes, so no need to try and multitask in the kitchen. Give it a couple grinds of pink himalayan sea salt or a sprinkle of celtic salt.
Squeeze the 1/2 lemon over the spinach while cooking for more flavor. You can give it another squeeze when it's done and a pinch more salt. Takes 5 minutes to prepare. Savor every bite!
