Fresh garlic and lemon with sauteed spinach is full of iron and tons of vitamins and nutrients. You can get a lot of this vegetable into your body if you sautee it versus eating it raw. 

Heat your pan on the burner on medium-low heat.


You will need:

1 tsp coconut oil or avocado oil

2 heaping handfuls of spinach

1-3 cloves of garlic depending on how much you like garlic

1/2 lemon

handful of pine nuts

Get coconut oil in pan, lightly brown your pine nuts. Mince garlic. Lightly brown the garlic, and as much spinach as you care to eat. The spinach will only take 1-2 minutes, so don't go anywhere while it's cooking! Make sure you squeeze the 1/2 lemon over the spinach while cooking for more flavor. You can give it another squeeze when it's done if desired. Takes 5 minutes to prepare. Savor every bite!
