HOMEMADE SALSA

Once I make salsa, it's completely gone within 1-2 days. Neighbors, friends and family demolish it. Here it is, but don't expect it to last long!

You will need: (Always buy local and organic as much as you can!)

 

7 Vine ripe tomatoes (or heirolooms, or yellow tomatoes)
1 green bell pepper
1/2-1 medium onion (depending on if you like onions)
1-3 jalapeños (depending on how spicy they are.) Sometimes 1 will do, sometimes ya need 3-4. Taste as you go and make it how you like!
1 small bundle of cilantro

1 clove of garlic (if you don't have 1, it won't ruin your salsa if you skip this)

Wash all ingredients. Cut down to the sizes you need to fit in your blender or food processor. Mix in blender on "food chop" or "stir" so the consistency still is a little chunky. If you choose the food processor, just pulse on low. You can either go ahead and eat it as is, or if you have some time, place in sauce pan on stove on low heat. Let simmer for about an hour so the flavors really come out.

Fact: salsa goes with everything and anything ;)

Follow same ingredients as above. Grill all (not cilantro though) along with the peaches. When it cools, blend all. Toss in the cilantro and blend again. Garnish with cilantro and enjoy!
