GRILLED ZUCCHINI CHICKPEA SALAD

Love this salad! So many layers of flavor and textures!

 

You will need:

 

Zucchini

Cucumber

Heirloom tomato

Chickpeas -- use this roasted chickpea recipe if you want!

Jalapeno

Fresh basil

Pine nuts

Balsamic glaze

 

Wash and cut your zucchini, brush on some olive oil, ground pepper and salt. Make sure it is not overgrilled, just grilled enough so it is soft. This should take around 8 minutes, so set a timer if you need.

Wash chop and cut your cucumber, heirloom tomato and jalapeno (s).

Wash your fresh basil.

Bring your chickpeas to a boil, drain and rinse, then set aside.

 

Sprinkle the chickpeas and pine nuts on top of the salad, top with fresh basil. Drizzle a nice balsamic glaze over the top, and enjoy!
