Crockpot Quinoa Casserole

Meal prepping is so much easier when a crockpot is involved!

Besides the veggie broth, the measurements do not have to be exact. Add or subtract what you feel like. For example, sub pinto beans for black beans, sub red quinoa for regular quinoa, sub the mint for chives...make it something you love and each week as you have the basics for this, you can make it a new dish each week by just subbing some things out.  My goal for my clients is to teach and not have them so dependent for meal ideas.

You will need: 

crock pot

4 c organic veggie broth

1 c red lentils

1 can pinto beans (rinsed and drained)

2 sweet potatoes, washed, peeled and diced

Couple shakes of smoked paprika

Couple shakes of cayenne pepper

1 tsp celtic salt (give or take)

1 tsp ground pepper (like 5 grinds)

Fresh herbs (for after it's done)

Throw all besides the herbs in the slow cooker with the lid on high for 3 hours and enjoy!

Garnish with fresh herbs - I use fresh mint and parsley, but hey use what you like!

**When you are sick of this meal, use this as the filling for tacos and it's def a new meal and a time and money saver!
