CRISPY FRENCH FRIES
Super simple!
Preheat oven to 425 degrees.
You will need
3 tsp coconut oil
2 large potatoes (yellow or sweet potatoes)
ground pepper and Celtic Salt
cast-iron skillet or baking sheet if you don't have a cast-iron
fresh chives
Wash, scrub, (peel if you want) and cut your potatoes into strips.
Cast-iron directions: Place 3 tsp coconut oil in cast-iron on the burner on medium heat. When the pan is hot, put potatoes in the skillet. Cook for a few minutes, and flip the potatoes over. Place cast-iron skillet in the oven at 425 and cook for 30-40 minutes until crispy. Add fresh, chopped chives if you have some for the last 5 minutes and enjoy!
Baking sheet directions: Melt 3 tsp of coconut oil. Place the coconut oil and potato strips in a mixing bowl and cover until coated. Lay out on a baking sheet. Sprinkle the ground pepper and Celtic salt. Roast at 425 for 40 minutes or until nice and crispy. (or however you like it. Maybe you like the "fries" softer.) Figure out how you like it, (30-40 min should be the ballpark time) add fresh, chopped chives for the last 5 minutes and enjoy!
