POMEGRANATE LIME RICE

Great to bring to parties and/or meal prep for the week!

You will need:

ββ2 c short grain brown rice
2.5 c veggie broth
1 can coconut milk
1/4 sweet onion
1 can chickpeas
1 fresh pomegranate or 1 container of pomegranate seeds
1/2 bunch organic cilantro, chopped
1 fresh lime
Dash of salt
1" fresh ginger
Optional: cayenne pepper

On medium heat, take a medium-sized pot and drizzle a little olive oil or coconut oil. Add the chopped onion until they're slight browned. Grate the ginger, and throw that in when the onions are browned. Give it a stir and after about 30 seconds add in the 2.5 c of short grain brown rice. Stir for around a minute so bring the flavors together.

Add in the 2.5 c of veggie broth, the 1 can of coconut milk, a dash of salt and the (optional) cayenne pepper. **This will make the dish spicy, so if you're trying to get your kids to eat it, add it afterwards to your plate only.**

Let the rice sit covered for 40 minutes or until the liquid is gone. If the rice isn't quite done after 40 minutes, just add a little more liquid (water or veggie broth) and let it go a little longer.

Fold in the chickpeas. Add the zest of one lime. Squeeze in the lime juice. Fold in the pomegranates and cilantro.
