CHIPOTLE SEITAN BOWL
I like to keep Sweet Earth Foods on hand -- something about a big savory bowl that's so satisfying after leg day, or just when you're really hungry! I buy seitan at Whole Foods. Remember if your grocery store doesn't carry something you want, simply ask! They will be happy to accommodate you.
You will need:
1. Cook the rice (whatever you're feeling, brown, bamboo, jasmine, quinoa, whatevs) on stove top.
2. Heat the organic black beans on the stove top
3. When they're done, combine into one pot on the stove top with the seitan so the flavors come together. Heat for around 5 minutes or until the seitan is warmed all the way through.
4. Place on a plate
5. Garnish with the sliced avocado and chopped cilantro.
Pair any simple sides to this dish you're in the mood for.
Side note: I had the rice and beans already made, so I got to cut straight to #3 and this meal only took about 5 minutes to make. Keep it in mind to keep these on hand when you know you're going to have a busy week!
