You will need:


1 c brown rice

2 c hemp milk for rice

1/2 c pistachios

1/2 head cauliflower

1/2 c hemp milk for puree (add more if needed depending on how creamy you want it)

Sprinkle of ground pepper and kosher salt

1/2 bundle of parsley

2 tsp hemp hearts for garnish

Blender for cauliflower puree

Rice cooker for rice

Pot to steam cauliflower


Get your rice going in the rice cooker, since it will take 15-20 minutes, do this first. (1 c brown rice + 2 c hemp milk)

Wash your cauliflower and chop so it will fit in the pot. Add just enough water to cover the bottom of the pot. Steam cauliflower with a lid for 5 minutes or until soft. Add to blender with hemp milk and parsley and puree. If you need extra hemp milk, add accordingly, just don't let it get runny. Set aside.

When rice is done cooking, portion out for yourself and any guests. Top each portion with the cauliflower puree. Top with hemp hearts for extra garnish and a handful of pistachios. If you have extra parsley, add that to the plate also so it's pleasing to the eye.
