Great fall dish to enjoy with all fresh ingredients!

You will need:

1 c quinoa, cooked

1/3 roasted butternut squash (roast at 400 until soft)

handful of shelled pistachios

1/4 c chickpeas (garbanzo beans) cooked

3 tbs hemp hearts

1/2 head of cauliflower, parsley, 2 garlic cloves, hemp milk (or coconut or almond milk)


​How to make cauli puree:

Steam washed and chopped cauli. Put in blender with 3/4 c hemp milk, 2 minced garlic cloves, and a handful of parsley. Puree. Add more hemp milk if you want it really creamy, or until desired consistency.


Combine cooked quinoa, roasted butternut squash, pistachios, cooked chick peas. Top with the hemp hearts and cauliflower puree. Garnish with fresh parsley and enjoy!
